Made purely from rice, Fukushogun uses expertly selected sake rice grown in Ibaraki Prefecture. For yeast, we use our own M310 Yeast, which has excellent characteristics and actively produces ethyl caproate called Ginjoka.
Our specially crafted gin is made from distilled sake and matured for 10 years. Seven good quality botanical fruits such as juniper berry, lemon peel, orange peel, and cinnamon are used to bring a natural citrus flavor.
This is sake exclusively to be paired with mackerel. You can enjoy it with grilled or cooked mackerel as well as all other kinds of dishes featuring mackerel. A hint of lemon and its pleasant aroma spreads throughout your palate, moderating the strong flavor of the mackerel, and clears the oil in your mouth. Made only from Japanese Shirakaga apricot, Hyakunen-umeshu is mixed with brandy and honey after being matured for over three years. It has a strong, rich flavor and is highly popular among our customers.
