From the Covid pandemic, our company decided to make a fresh start and created “Shinjo”. Aiming to produce sake with an emphasis on safety, we are also conducting joint research with the prefecture's Industrial Technology Center.
It has a full, robust flavor with a notable sake-like alcohol taste and a sharp, acidic aftertaste. Warming this sake brings out the bitter and complex flavor and refined taste produced by lactic acid bacteria.
Given its lighter and cleaner taste than typical kimoto brewed sake, we recommend this as an introductory sake to the traditional kimoto brewing method.
This sake has a mild, sweet aroma of muskmelon and Muscat. On the palate, you will experience a gentle and delicate apricot-like sweetness and elegant acidity.
As it becomes warmer, the texture becomes thick and smooth. When swallowing, you can note a slight accent of minerality and bitterness.
This sake has a fruity, citrus-like top aroma with a hint of sweet rice malt.
On the palate, you can fully savor a refreshing and tangy sweetness just like that of freshly picked, juicy oranges.
