We have a system in place that allows us to manage and monitor the entire process from boiling the raw shirasu in an iron pot to the finished product, so you can enjoy the product with a peace of mind.
Kujihama Port, where the shirasu are landed, is about a 5-minute drive from the main plant.
Shirasu caught with fishing nets, which is less likely to damage the delicate shirasu, are cooled thoroughly and brought to the factory while still fresh, and those with superior size and color are carefully selected for immediate processing.
The product is manufactured without additives or coloring making it safe to eat by people of all ages.

Shirasu also goes great with pasta.

High-quality "Shirasu" are freshly processed from raw shirasu landed at Kujihama, IBARAKI Prefecture, and offer the original sweetness and flavor of shirasu.
Defrost it in the refrigerator for about 30 minutes and eat it as is or with rice, use as a topping for your favorite pasta or salad.

<Shirasu Pasta> 1 Serving
●Ingredients
 Shirasu - Around 150 grams
 Pasta - 100 grams
 Garlic - 1 clove
 Olive Oil - 3 tablespoons
 Any amount of cabbage, broccoli, or your favorite vegetable.

●How to make
1. Boil pasta firmly.
2. Cook sliced garlic in a pan with oil.
3. When the scent of garlic becomes strong, add your favorite vegetables to your preferred amount.
4. Once the vegetables are cooked, add the pasta to the pan and mix.
5. When cooking is finished, serve up, add Shirasu on top and enjoy!

Dried fish

Each piece of Dried fish is hand opened and carefully processed by artisans.
Ingredients are carefully selected from the best fatty fish available at the time such as various kinds of mackerel, splendid alfonsino, rockfish, and blackthroat seaperch.
One of the biggest features of KOMATSU SUISAN’S Dried fish is that it is pickled in green tea. The effect of green tea, which contains a large number of catechins, produces dried fish that is soft, fluffy, and not fishy even after it has cooled. Being seasoned with salt makes them taste great even when baked from frozen as they do not lose flavor.

<Grilled fish cooking method>
1. Cook from frozen on a grill or pan with the skin side down.
 *In the case of using a fish grill, adding green tea instead of water will further plump up the fish and remove the odor.
2. When the skin is lightly browned, turn the fish over and cook until done!

  • Dried fish

    Each fish was carefully cut open and processed by professionals. Our dried goods have also been steeped in green tea. Therefore, they do not have strong smell and they stay plump and soft even when they get cold. They also have been salted, so you can grill them while they are frozen. It keeps the umami unchanged and allows you to enjoy the delicious taste. We handle various types of fish: Okhotsk atka mackerel, mackerel, splendid alfonsino, broadbanded thornyhead, blackthroat seaperch, and Japanese horse mackerel.
  • Shirasu

    The raw whitebait caught in Japan is boiled right away and it is fluffy and delicious. Also, it is a high-quality whitebait that carefully removes foreign matter and focuses on size, moisture and salt. It can be used for various dishes such as rice and pasta with a moderate saltiness. Since whole fish can be eaten, it is nutritious, especially rich in calcium, so it can compensate for calcium that tends to be deficient.
