This time, we are talking to Keinosuke Hirose of Hirose Company, a traditional sake brewery using high-quality groundwater from the Mt Tsukuba watershed, about their export products "Yuzu Shiragiku", "Ume Shiragiku (Tsuyu Akane, Ao Ume)" and "Koubai Ichirin Junmai Ginjo".

HIROSE Company

Hirose Company is a sake brewery with a long history, founded in 1805.
Its representative brand is Shiragiku. The brewery is located in Ishioka City, which thanks to its cold climate and good groundwater from Mt Tsukuba, is suitable for traditional sake brewing.
The company’s eighth generation brewer, Keinosuke Hirose, is particular about his sake brewing: "I cherish the sake brewing atmosphere. Of course it is important to make fine sake with good rice, but I also place great importance on the relationships between the people who make the sake. The raw materials yeast and koji used for sake are living organisms. An atmosphere where people are smiling can be transmitted to these ingredients. I believe that a good atmosphere for sake brewing will produce great sake."

"Yuzu Shiragiku" and "Koubai Ichirin Junmai Ginjo" are recommended!

Recommended export products include three sake-based liqueurs, including "Yuzu Shiragiku", which has the original mellow aroma of yuzu, "Ume Shiragiku Tsuyu Akane", which has a plum-like aroma, and "Ume Shiragiku Ao Ume", which has the sweet, sour and rich flavour of green plum. We use "Yamada Nishiki", which is rice grown by a local contract farmer and is suitable for sake production. The sake, "Koubai Ichirin Junmai Ginjo", is a neat, dry sake with a smooth mouthfeel and a harmonious balance between aroma and flavour.

The label and capacity of the various liqueurs can be adjusted to suit your needs.

The labels and quantity can be changed for the same product.

A recommended way to enjoy

Liqueurs such as "Yuzu Shiragiku" and "Ume Shiragiku" are recommended to be enjoyed on the rocks or with soda.
"Koubai Ichirin Junmai Ginjo" is best served chilled with light-flavoured dishes such as tempura and fried white fish.

HANDLING PRODUCTS

  • UME SHIRAGIKU(Tsuyu Akane)

    A new Ibaraki Prefecture product made using Tsuyu Akane plums. Bright red from the natural colour of the juice itself. Sake with a distinctive plum-like aroma and a gentle sweet and sour flavour.
  • UME SHIRAGIKU(Ao Ume)

    A sweet, sour and richly flavoured sake-based plum wine (umeshu) made with plenty of unripe ume (ao ume) from Ibaraki Prefecture.
  • YUZU SHIRAGIKU

    A slightly sweet, aromatic and refreshing sake-based yuzu liqueur with plenty of squeezed yuzu juice from Ibaraki Prefecture. Enjoyed served chilled or on the rocks.
  • TUKUBANOKOUBAIITIRIN

    Junmai Ginjo-shu made from 50% polished Yamada-Nishiki rice from Ibaraki Prefecture. A light, dry sake which goes down smoothly with a harmonious balance of aroma and flavour. It is especially delicious when served chilled.
