This time we have asked Mr. Nemoto from Nemoto Tsukemono Co., Ltd., a company that has been dedicated to the production of dried plums, about an export product named “Mito Fukuyui Umeboshi”

Since its establishment in 1935, Nemoto Tsukemono has been dedicated to the production of dried plums, from manufacturing, processing, and offering them for wholesale and retail.
In the Edo period, The 9th Feudal Lord of the Mito Domain, TOKUGAWA Nariaki established Kairakuen Park and had many plum trees planted that are both beautiful to look at and that can be used as emergency food. Nemoto Tsukemono has continued to produce dried plums for around 80 years in Watari Town, Mito, where Tokugawa's homebase was.

Mito Fukuyui Umeboshi

Mito Fukuyui Umeboshi is made with plums that we grow ourselves and we make sure to not use any pesticides or chemical based fertilizer during this process. We make sure to carefully sun dry our plums, and then add salt, an age old tradition that results in deliciousness.
They are known for being plump, large, soft and sour.
These plums are produced in a modern facility with strict hygiene management. Rather than machine dried, they are sun dried in a plastic greenhouse which results in a very rich flavor.

Mito Fukuyui Umeboshi simple recipes

“Mito Fukuyui Umeboshi” paired with oil makes it the perfect combination to be used as a dressing or a sauce for meat. Instead of salt, add it to a pasta dish and mix for deliciousness.

Fukuyui Dressing
Ingredients
Olive Oil – Desired Amount
Mito Fukuyui Umeboshi – 1 plum

Recipe
1) Crush Mito Fukuyui Umeboshi and mix with olive oil.
2) Pour on salad and enjoy!

Fukuyui Peperoncino
Ingredients (Serving size for 1 person)
Pasta – 100g
Garlic – 1 clove
Bacon – 1 strip
Olive Oil – Desired amount
Mito Fukuyui Umeboshi – 1 plum

Recipe
1) Cook pasta in boiling water. The pasta will be reheated so be sure to remove 1 minute before the designated time.


2) Add olive oil, crushed Mito Fukuyui Umeboshi, garlic, and bacon to a pan and then apply heat.

3) Be sure to cook the Mito Fukuyui Umeboshi thoroughly while stirring.

4) Add the pasta to the pan and mix well. Enjoy!

  • Mito Soboro Natto

    Soboro natto has long been eaten in Mito, the home of natto (fermented soybeans). It is seasoned with chopped dried radish. Thanks to its subtle taste and flavor, it is very easy to eat and easy to make arranged dishes. It goes great with rice or even with noodles.
  • Mito TokugawaPark Shikinbai (Mito Kairaku-en Shikinbai)

    Using only Japanese plums (ume) from Kairaku-en, Mito, we have recreated the "Shikinbai" invented by Lord Tokugawa Nariaki of the Mito domain who was the father of the last Shogun, the 15th Tokugawa Shogun, Tokugawa Yoshinobu. It is an excellent product made without using any chemical seasonings.
  • Mito Plum Fukuyui

    This is a full-scale umeboshi that is finished with only salt using the Fukuyui brand of plums from Mito City. You can feel the balance of rich plum aroma and saltiness and sourness.
