Sweet potatoes carefully grown in Ibaraki Prefecture are used fully, including those that could not be sold on the market due to irregular shape or size. The sweet potatoes are slowly roasted overnight in-house to bring out the natural sweetness. Koji-based sweetener is used for the sweetness.
