Lotus roots have been produced in Ibaraki, Japan's largest lotus root producer, for over 40 years. With the recent advancement of plant breeding, high-quality lotus roots can be grown all year round. Lotus roots produced in Ibaraki Prefecture are characterized as plump, tender, subtly sweet, fine in texture, and beautifully white.
